Ingredients (serves 6)
Penn: 600 g

Description of the recipe
1 Set a large amount of water to boil in a saucepan.
2 onion and chop and set aside. Wash vegetables and watercress. Cut the tomatoes into four and remove the seeds. Cut diced tomatoes, zucchini and eggplant.
Cut the goat cheese into 1 cm square.
3 Remove watercress stems and keep the leaves.
In a pot of boiling water, put the watercress and cook for 5 minutes. Drain and mix it in a blender with olive oil. Add salt and pepper and set aside.
4 Set cook pasta in boiling water for 11 minutes by adding coarse salt (10 g / liter).
5 In a hot wok with a little olive oil, sweat the onions to 2 min. Add the eggplant and cook for 3 minutes. Continue with the zucchini for 3 minutes, then stir in tomatoes, goat cheese and the drained pasta. Season everything.
6 Dresser into bowls and finish with watercress coulis.
