How to Make It :
- 30 ml (2 tbsp. Tablespoons) red wine vinegar
- 1 dash of olive oil
- 500 ml (2 cups) cooked quinoa
- 125 ml (1/2 cup) of cherry tomatoes, quartered
- 60 ml (1/4 cup) currants
- 1 French shallot, finely chopped
- 1 stalk celery, chopped
- 15 ml (1 tbsp. Tablespoons) chopped fresh parsley
- 15 ml (1 tbsp. Tablespoons) fresh tarragon, chopped
- 15 ml (1 tbsp. Tablespoons) chopped fresh chives
- 30 ml (2 tbsp. Tablespoons) toasted slivered almonds
- (1/2 tsp.) 2 ml salt
- ground black pepper, to taste
How to Make It :
- 1. In a bowl, make a dressing by whisking together vinegar, olive oil, salt and pepper.
- 2. Stir quinoa and remaining ingredients.
- 3. Refrigerate 30 minutes to allow flavors to blend before serving.
