Quinoa Tabbouleh With Herbs

Ingredients :
  • 30 ml (2 tbsp. Tablespoons) red wine vinegar
  • 1 dash of olive oil
  • 500 ml (2 cups) cooked quinoa
  • 125 ml (1/2 cup) of cherry tomatoes, quartered
  • 60 ml (1/4 cup) currants
  • 1 French shallot, finely chopped
  • 1 stalk celery, chopped
  • 15 ml (1 tbsp. Tablespoons) chopped fresh parsley
  • 15 ml (1 tbsp. Tablespoons) fresh tarragon, chopped
  • 15 ml (1 tbsp. Tablespoons) chopped fresh chives
  • 30 ml (2 tbsp. Tablespoons) toasted slivered almonds
  • (1/2 tsp.) 2 ml salt
  •   ground black pepper, to taste



How to Make It :

  • 1. In a bowl, make a dressing by whisking together vinegar, olive oil, salt and pepper.
  • 2. Stir quinoa and remaining ingredients.
  • 3. Refrigerate 30 minutes to allow flavors to blend before serving.
